Air dry on paper towel for about 2 hours. Remove skin if needed. Cut into serving size pieces and set aside room temp to prep for searing.
Zest orange, lemon and lime. Cut lime slices.
Create citrus juice with lemons and limes. Chop avocado. Pour over with a little salt. Can fridge for 30-60 minutes.
Preheat oven to 350F. Prep garlic.
Put a little oil and salt on the fish. Put in the hot pan. Add a little bit of butter for increased carmelization, 3-4 minutes until you see a nice crust outside. Put in oven (maybe 5-7 minutes, depending on thickness). Will touch like a medium rare steak when done.
Put back on stove. Flip over so sear other side. Add butter and garlic. Spoon melted garlic butter onto fish. Then set aside.
