Baked 'Fried' Breaded Eggplant

Ingredients
olive oil, divided
2 cups dry unseasoned bread crumbs
½ cup grated Parmesan cheese, or more to taste
¼ teaspoon garlic powder, or to taste
¼ teaspoon dried oregano, or to taste
¼ teaspoon dried basil, or to taste
salt and ground black pepper to taste
2 eggs
1 splash water
1 eggplant, peeled and sliced into 1/4-inch rounds
Used Italian bread crumbs and heaping measurements of spices. Loved it a lot. The Italian bread crumbs are a bit salty, though. Homemade breadcrumbs could improve this. Did 22m at 350F, then another 5m at 410F to help brown it (the oven temp rose during the 5m.)
To use in eggplant parmesan, per two peas & their pod
Pour some a little of the sauce into the baking dish. Arrange half of the eggplant slices over the sauce, overlapping slightly. Spoon 1 cup of the remaining sauce over the eggplant and sprinkle with half of the mozzarella cheese and a sprinkle of the parmesan. Add a layer of the remaining eggplant slices and top with the remaining sauce, mozzarella and Parmesan. Bake, uncovered, until the sauce bubbles and the top is golden, 15 to 20 minutes.
